Preheat the oven to 300°F to 350°F
Scoop seeds from the pumpkin
Separate the seeds from the pulp
Rinse the seeds under cold water
Pat the seeds completely dry
Toss the seeds with a little oil
Add salt or other seasonings if desired
Spread the seeds in a single layer on a baking sheet
Bake for 20 to 30 minutes
Stir the seeds halfway through baking
Remove when golden and crisp
Let the seeds cool before eating
