Preheat the oven to 425°F (220°C)
Wash and scrub the sweet potatoes
Peel the sweet potatoes if desired
Cut the sweet potatoes into cubes, wedges, or leave them whole
Pat them dry
Toss with oil
Add salt and any desired seasonings
Spread in a single layer on a baking sheet
Roast for 25 to 45 minutes, depending on size and cut
Flip halfway through for even browning
Check for tenderness with a fork
Remove from the oven and serve
