Preheat the oven to 400°F to 425°F
Wash and dry the tomatoes
Cut larger tomatoes in halves or quarters
Leave small tomatoes whole
Place the tomatoes on a baking sheet
Drizzle with olive oil
Sprinkle with salt and pepper
Add garlic, herbs, or other seasonings if desired
Toss gently to coat evenly
Arrange in a single layer with cut sides facing up or down as preferred
Roast for 20 to 40 minutes, depending on size
Roast until softened, wrinkled, and lightly browned
Remove from the oven and let cool slightly
Use immediately or store for later use
