Let the bacon grease cool slightly, but keep it liquid
Strain it through a fine-mesh sieve, cheesecloth, or coffee filter to remove bits
Pour it into a clean, heat-safe container such as a glass jar or metal can
Leave a little space at the top of the container
Seal the container tightly once the grease has cooled more
Store it in the refrigerator for short-term use
Store it in the freezer for longer-term use
Label the container with the date
Discard it if it smells rancid, looks moldy, or tastes off
