Wash the griddle surface with warm water and mild soap
Rinse thoroughly and dry completely
Turn the burners on high for 10 to 15 minutes
Let the griddle cool slightly
Apply a thin, even layer of high-smoke-point oil
Use a paper towel or cloth to spread the oil across the entire cooking surface
Wipe off any excess oil so only a thin film remains
Turn the burners back on high until the oil smokes and burns off
Repeat the oiling and heating process 3 to 5 times
Let the griddle cool after the final coat
Wipe the surface lightly with oil before first use
Clean and oil the griddle after each cooking session
