Wash the griddle with warm water and mild soap if it is new or has manufacturing residue

Dry the surface completely

Turn the griddle on to medium-high heat

Let it heat until the surface changes color and any moisture evaporates

Apply a very thin layer of high-smoke-point oil to the entire cooking surface

Use a paper towel or cloth to spread the oil evenly

Wipe off any excess oil so the surface looks nearly dry

Keep heating until the oil stops smoking and the surface darkens

Repeat the oiling and heating process 3 to 5 times

Let the griddle cool slightly between coats if needed

After each cooking session, scrape off food residue while warm

Wipe the surface clean

Apply a light coat of oil after cleaning to maintain the seasoning

Store the griddle in a dry place

Re-season any areas that look dull, rusty, or stripped
