Wash the griddle plate with warm water and mild soap
Rinse thoroughly and dry completely
Turn the burners to high heat
Heat the griddle until it changes color slightly and any moisture evaporates
Apply a thin, even layer of cooking oil with a high smoke point
Use a paper towel or cloth to spread the oil across the entire cooking surface
Wipe off any excess oil so only a very thin film remains
Keep the heat on until the oil stops smoking and the surface darkens
Repeat the oiling and heating process 3 to 5 times
Let the griddle cool after the final coat
Wipe on a light layer of oil after each use to maintain the seasoning
