Wash the griddle surface with warm water and a small amount of mild soap
Rinse thoroughly and dry completely
Heat the griddle on high until it turns dark and any moisture evaporates
Apply a thin, even layer of high smoke point oil to the entire cooking surface
Use a paper towel or cloth to wipe off all excess oil
Keep heating until the oil stops smoking
Repeat the oiling and heating process 3 to 5 times
Let the griddle cool slightly after the final coat
Wipe on a very light layer of oil after each use to maintain the seasoning
