Use mild wood like apple, cherry, or pecan
Pat the chicken breasts dry
Trim any excess fat or uneven edges
Brush with oil or melted butter
Season with salt, pepper, and your preferred rub
Place the chicken breasts on the smoker
Insert a meat thermometer into the thickest part
Smoke until the internal temperature reaches 160°F to 165°F
Remove the chicken from the smoker
Rest for 5 to 10 minutes
Slice and serve
