Let the bacon fat cool slightly, but keep it liquid
Strain it through a fine-mesh sieve, cheesecloth, or coffee filter to remove bits
Pour it into a clean, dry, heat-safe container
Use a glass jar, metal container, or food-safe airtight container
Seal the container tightly
Store it in the refrigerator for up to 1 month
Store it in the freezer for longer storage, up to 6 months or more
Label the container with the date
Keep water and food crumbs out of the fat
Scoop out only what you need with a clean utensil
Discard it if it smells sour, rancid, or looks moldy
