Wash and dry the lemon
Use a fine grater or microplane if available
Use a box grater with the smallest holes
Use a vegetable peeler to remove thin strips of peel
Trim away any white pith from the strips with a knife
Finely chop the peel into tiny pieces
Use a sharp paring knife to shave off thin outer peel
Avoid the bitter white pith
Rotate the lemon as you work
Stop when only the yellow outer layer has been removed
