Heat a skillet or frying pan over medium heat
Place one tortilla in the pan
Sprinkle shredded cheese evenly over half or all of the tortilla
Add optional fillings if desired
Fold the tortilla in half if using half the tortilla
Cook for 1 to 2 minutes until the bottom is golden brown
Flip carefully with a spatula
Cook the other side for 1 to 2 minutes until golden and the cheese is melted
Remove from the pan
Let it cool briefly
Cut into wedges and serve
