Pat halibut fillets dry with paper towels
Season both sides with salt and pepper
Heat a skillet over medium heat
Add oil or butter to the skillet
Place halibut in the skillet
Cook for 3 to 4 minutes on the first side
Flip the halibut carefully
Cook for 2 to 4 minutes on the second side until opaque and flaky
Remove from heat
Serve immediately with lemon if desired
