Preheat a skillet, grill, or pan to high heat
Sear the steaks briefly on each side, about 1 to 2 minutes per side for rare to medium-rare
Avoid overcooking to keep the center tender
Remove from heat and let rest for a minute
Slice against the grain if serving as steaks or for salads and bowls
Serve with soy sauce, citrus, wasabi, or a simple dipping sauce
