1 cup creamy peanut butter
1/2 cup unsalted butter, softened
1 teaspoon vanilla extract
3 1/2 cups powdered sugar
12 ounces semisweet chocolate chips
1 tablespoon shortening or coconut oil
Mix peanut butter, butter, and vanilla until smooth
Gradually mix in powdered sugar until dough forms
Roll into small balls and place on a lined baking sheet
Chill until firm
Melt chocolate chips with shortening or coconut oil
Insert a toothpick into each ball
Dip each ball in chocolate, leaving a small circle exposed on top
Return to the baking sheet
Chill until chocolate is set
Store in an airtight container in the refrigerator
