2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
2 tablespoons shortening or lard
3/4 cup warm water, as needed
Oil for frying
Mix flour, baking powder, and salt in a bowl
Cut in shortening until crumbly
Add warm water gradually and mix until a soft dough forms
Knead dough until smooth
Cover and rest dough for 20 to 30 minutes
Divide dough into equal portions
Roll each portion into a thin oval or circle
Heat oil in a skillet or deep pan over medium-high heat
Fry each dough piece until puffed and golden, flipping once
Drain on paper towels
Fill with desired toppings after cooling slightly
