Wash the orange thoroughly
Dry it completely
Use a microplane, zester, or fine grater
Grate only the outer orange layer
Avoid the white pith underneath
Rotate the orange as you zest
Stop when you reach the white layer
Use immediately or store covered in the refrigerator
