How to Make a Brine?

Choose the type of brine you need: wet brine or dry brine

For a wet brine, combine water and salt in a clean container

Use about 1/4 cup salt per 1 quart of water for a basic brine

Stir until the salt is fully dissolved

Add sugar if desired

Add herbs, spices, garlic, or citrus if desired

Cool the brine completely before using it on food

Submerge the food fully in the brine

Refrigerate while brining

For a dry brine, coat the food evenly with salt

Add sugar and seasonings if desired

Place the food on a tray or rack

Refrigerate while the salt draws out moisture and seasons the food

Rinse or pat dry if needed before cooking
