Crack the egg gently on a flat surface
Hold the egg over a bowl
Split the shell into two halves
Let the egg white fall into the bowl
Pass the yolk back and forth between the shell halves
Keep the yolk intact while the white drains off
Place the yolk in a separate bowl
Use your hands or an egg separator if preferred
