Take the steak out of the refrigerator 20 to 30 minutes before cooking
Pat the steak dry with paper towels
Season both sides generously with salt and black pepper
Heat a heavy skillet or grill over high heat until very hot
Add a small amount of oil with a high smoke point
Place the steak in the pan or on the grill
Cook for 2 to 4 minutes on the first side
Flip the steak and cook for 2 to 4 minutes on the second side
Add butter, garlic, and herbs if desired during the last minute
Check for an internal temperature of 130 to 135 F
Remove the steak from the heat
Let the steak rest for 5 to 10 minutes
Slice and serve
