How To Broil Steak?

Choose a steak 1 to 1.5 inches thick

Pat the steak dry with paper towels

Season both sides with salt and pepper

Let the steak sit at room temperature for 20 to 30 minutes

Move the oven rack to the top position, about 4 to 6 inches from the broiler

Preheat the broiler on high

Place a broiler pan or wire rack over a baking sheet

Lightly oil the rack or steak

Place the steak on the prepared pan

Broil the first side for 4 to 6 minutes

Flip the steak with tongs

Broil the second side for 3 to 6 minutes

Check internal temperature with a meat thermometer

Remove at 125°F for rare

Remove at 130°F to 135°F for medium-rare

Remove at 140°F to 145°F for medium

Rest the steak for 5 to 10 minutes before slicing

Slice against the grain
