Heat a skillet, grill, or broiler to high heat
Add a small amount of oil to the pan if using a skillet
Sear the steak for 3 to 5 minutes per side for medium-rare, depending on thickness
Reduce heat if needed and cook until the desired doneness is reached
Use a meat thermometer to check internal temperature
Remove the steak from heat at 130 to 135 F for medium-rare or 140 to 145 F for medium
Rest the steak on a cutting board for 5 to 10 minutes
Slice thinly against the grain
