Rinse the corned beef under cold water
Place the corned beef in a large pot or Dutch oven
Add the seasoning packet if included
Cover the meat with water
Bring to a boil
Reduce to a low simmer
Cover and cook for about 2.5 to 3.5 hours, until tender
Add carrots and potatoes during the last 30 to 40 minutes of cooking
Add cabbage wedges during the last 15 to 20 minutes of cooking
Cook until the vegetables are tender
Remove the corned beef and let it rest for 10 to 15 minutes
Slice the corned beef against the grain
Serve with the cooked cabbage, carrots, and potatoes
