Preheat the oven to 450°F
Pat the eye of round roast dry
Season all over with salt, pepper, and any desired herbs or spices
Place the roast on a rack in a roasting pan
Roast for 15 minutes
Reduce oven temperature to 325°F
Continue roasting until the internal temperature reaches 125°F to 130°F for medium-rare or 135°F for medium
Remove the roast from the oven
Tent loosely with foil
Rest for 20 to 30 minutes
Slice thinly against the grain
Serve immediately
