Pat the top sirloin dry
Season generously with salt and pepper
Let it sit at room temperature for 20 to 30 minutes
Preheat a skillet, grill, or oven to high heat
Add a small amount of oil if using a skillet
Sear the steak for 2 to 4 minutes per side
Lower the heat or move to indirect heat if needed
Cook until the internal temperature reaches your desired doneness
Remove from heat and rest for 5 to 10 minutes
Slice against the grain
Serve immediately
