How To Make Blackened Chicken?

Pat chicken breasts or thighs dry

Mix paprika, garlic powder, onion powder, dried thyme, dried oregano, cayenne, salt, and black pepper

Coat the chicken evenly with melted butter or oil

Rub the spice mixture all over the chicken

Heat a cast-iron skillet over medium-high to high heat

Add a small amount of oil to the skillet

Place the chicken in the hot skillet

Cook until deeply browned on the first side

Flip and cook the other side until blackened and cooked through

Reduce heat if needed to prevent burning

Check that the internal temperature reaches 165°F

Rest the chicken for a few minutes before serving
