Heat a skillet, grill, or cast-iron pan over high heat
Add a small amount of oil with a high smoke point
Sear the steaks for 2 to 4 minutes per side for medium-rare, depending on thickness
Reduce heat slightly if needed to avoid burning
Check doneness with a meat thermometer
Remove at 125 to 130°F for rare
Remove at 130 to 135°F for medium-rare
Remove at 140 to 145°F for medium
Add butter, garlic, or herbs during the last minute if desired
Transfer the steaks to a plate
Rest the steaks for 5 to 10 minutes
Slice against the grain
Serve immediately
