Rinse 1 pound dry black beans and remove any debris
Soak the beans in plenty of water for 8 to 12 hours, or overnight
Drain and rinse the soaked beans
Add the beans to a large pot and cover with fresh water by 2 to 3 inches
Add optional seasonings such as onion, garlic, bay leaf, or salt
Bring to a boil over high heat
Reduce to a gentle simmer
Skim off any foam that rises to the top
Cover partially and cook until tender, about 1 to 1.5 hours
Stir occasionally and add more water if needed to keep beans covered
Test for doneness by tasting a bean for tenderness
Add salt near the end of cooking if desired
Drain or reserve the cooking liquid as needed
Use immediately or store cooled beans in the refrigerator or freezer
