Sort through the beans and remove any debris or damaged beans
Rinse the beans under cold water
Soak the beans overnight in plenty of water, or use a quick-soak method if preferred
Drain and rinse the soaked beans
Place the beans in a pot and cover with fresh water or broth
Add aromatics or seasonings if desired, but avoid adding salt until the beans are tender
Bring the pot to a boil
Reduce the heat to a gentle simmer
Skim off any foam that rises to the surface
Cover partially and cook until the beans are tender, stirring occasionally and adding water if needed
Check for doneness after about 1 to 2 hours, depending on soaking and bean age
Season with salt near the end of cooking
Drain the beans if needed and use as desired
