Choose grits (quick-cooking, regular, or stone-ground)
Measure grits and liquid (typical ratio: 1 part grits to 4 parts water or milk)
Add water or water + milk to a pot and bring to a boil
Add salt to the boiling liquid
Slowly whisk in grits to prevent lumps
Reduce heat to low and stir frequently
Cook until thick and tender (quick-cooking: about 5 minutes; regular: about 10–15 minutes; stone-ground: about 20–30 minutes)
Stir in butter, then adjust with salt and black pepper to taste
Optional: stir in cheese (cheddar), garlic, or herbs
Optional: top with shrimp, eggs, bacon, sausage, or gravy
Serve hot
