Preheat oven to 425°F
Wash and dry the zucchini
Trim the ends
Slice into rounds, half-moons, or spears
Toss with olive oil
Add salt and pepper
Add garlic powder or herbs if desired
Spread in a single layer on a baking sheet
Roast for 15 to 20 minutes
Flip halfway through
Roast until tender and lightly browned
Serve immediately
