Pat the chicken dry
Season with salt, pepper, cumin, chili powder, garlic powder, and paprika
Heat oil in a skillet over medium-high heat
Cook chicken breasts or thighs for 5 to 7 minutes per side, until browned and cooked through
Check that the internal temperature reaches 165°F
Remove from heat and let rest for 5 minutes
Slice, dice, or shred the chicken
Toss with a little lime juice and taco seasoning if desired
Serve in warm tortillas with taco toppings
