Preheat the grill to medium-high heat
Clean and oil the grill grates
Form burger patties about 3/4 inch thick
Season both sides with salt and pepper
Make a small indentation in the center of each patty
Place patties on the hot grill
Grill for 3 to 5 minutes on the first side
Flip once and grill for another 3 to 5 minutes
Add cheese during the last minute if desired
Check for desired doneness with a thermometer
Remove burgers from the grill
Let burgers rest for a few minutes
Toast buns on the grill if desired
Assemble with toppings and serve
