Wash collard greens thoroughly and remove thick stems
Tear or chop greens into bite-size pieces
Heat a large pot over medium heat
Add 1–2 tbsp oil (optional) and sauté 1 diced onion until softened
Add 3–5 minced garlic cloves and cook 30–60 seconds
Add 1–2 diced smoked ham hocks or 1–2 tbsp smoked turkey (optional)
Pour in 4–6 cups chicken or vegetable broth
Add 1–2 tbsp vinegar or apple cider vinegar
Add seasonings: 1–2 tsp salt, 1 tsp black pepper, 1–2 tsp red pepper flakes (optional), and 1–2 tsp smoked paprika (optional)
Add collard greens in batches, stirring until wilted
Bring to a simmer, then reduce heat to low
Cover and cook 45–75 minutes, stirring occasionally, until tender
Add 1–2 tbsp butter (optional) and adjust salt to taste
For extra flavor, stir in 1–2 tbsp brown sugar (optional) near the end
Serve hot
