Slice onions into 1/4-inch rings; separate into individual rings
Pat onion rings dry with paper towels
Set up breading station: flour in one bowl, beaten eggs mixed with milk in a second bowl, breadcrumbs (plus salt, pepper, garlic powder, paprika) in a third bowl
Toss onion rings in flour; shake off excess
Dip floured rings into egg mixture
Coat with breadcrumbs; press lightly so coating adheres
Heat oil to 350°F/175°C in a heavy pot or deep fryer
Fry in small batches 2 to 3 minutes per side, until golden brown
Remove with a slotted spoon; drain on a wire rack or paper towels
Serve hot; optionally sprinkle with salt immediately after frying
