Cut mozzarella into stick shapes (pat dry thoroughly)
Set up three shallow bowls: flour, beaten eggs, and breadcrumbs (optionally mix breadcrumbs with grated parmesan, garlic powder, and Italian seasoning)
Dredge mozzarella sticks in flour, then dip in beaten eggs, then coat in breadcrumbs
Place coated sticks on a parchment-lined tray
Freeze 20–30 minutes (until firm)
Heat oil to 350°F (175°C)
Fry sticks in small batches 1–2 minutes per side until golden and crisp
Remove and drain on a wire rack or paper towels
Serve immediately (optionally with marinara or dipping sauce)
