Use a heavy-bottom pot with a tight-fitting lid
Add 1–3 tablespoons of neutral oil (enough to lightly coat the bottom)
Heat oil over medium-high heat until it shimmers
Add 2–3 popcorn kernels
When the kernels pop, add the remaining popcorn kernels (about 1/3 cup)
Cover with the lid and reduce heat to medium
Shake the pot occasionally to keep kernels from burning
Listen for popping to slow down (about every 1–2 seconds)
Turn off heat when popping slows significantly
Let the pot sit covered for 10–30 seconds
Carefully remove lid (steam will be hot)
Season immediately with salt, butter, or desired toppings
Serve right away
