Add 2 to 3 tablespoons of oil to a large pot with a lid
Heat the pot over medium heat
Add 3 to 4 popcorn kernels
Cover the pot and wait for the test kernels to pop
Add enough popcorn kernels to make a single layer in the pot
Cover the pot again, leaving the lid slightly ajar to let steam escape
Shake the pot gently every few seconds
Remove the pot from the heat when the popping slows to 2 to 3 seconds between pops
Pour the popcorn into a bowl
Season as desired
