Rinse 2 to 3 stalks of fresh lemongrass
Trim off the root ends and tough top portions
Crush or bruise the stalks lightly
Cut the stalks into 2 to 3 inch pieces
Bring 2 to 3 cups of water to a boil
Add the lemongrass pieces to the water
Reduce the heat and simmer for 5 to 10 minutes
Turn off the heat
Strain the tea into a cup
Add honey or lemon if desired
Serve warm or chill for iced tea
