Preheat the gas grill to medium-high heat
Clean and oil the grates
Form burger patties slightly wider than the buns
Make a small indentation in the center of each patty
Season both sides with salt and pepper
Place the patties on the hot grill
Close the lid and cook for 3 to 5 minutes
Flip the burgers once
Cook the second side for 3 to 5 minutes
Add cheese during the last minute if desired
Check for doneness with a meat thermometer
Remove burgers from the grill
Rest the burgers for a few minutes
Toast the buns on the grill if desired
Assemble and serve immediately
