Pound chicken breasts or cutlets to even thickness
Season the chicken with salt and pepper
Set up three bowls: flour, beaten eggs, and breadcrumbs
Dredge each piece in flour
Dip it into the beaten eggs
Coat it evenly with breadcrumbs
Press the breadcrumbs onto the chicken to help them stick
Heat oil in a skillet over medium heat
Cook the chicken until golden brown on both sides
Transfer to a baking sheet if needed and finish in the oven until fully cooked
Check that the internal temperature reaches 165°F
Let the chicken rest for a few minutes before serving
