Use ground beef with about 80/20 fat content
Form patties slightly larger than the bun
Make a small dimple in the center of each patty
Season both sides with salt and pepper
Heat a skillet or frying pan over medium-high heat
Add a small amount of oil if needed
Place patties in the hot pan without overcrowding
Cook for 3 to 5 minutes on the first side
Flip once and cook for 3 to 5 minutes on the second side
Add cheese during the last minute if desired
Check for doneness with a meat thermometer
Remove burgers from the pan and let rest for a few minutes
Serve on buns with desired toppings
