Preheat the oven to 300°F to 325°F
Remove the membrane from the back of the ribs
Pat the ribs dry with paper towels
Season both sides with salt, pepper, and your preferred dry rub
Place the ribs on a foil-lined baking sheet or in a baking dish
Cover tightly with aluminum foil
Bake for 2.5 to 3.5 hours, until tender
Remove the foil during the last 15 to 20 minutes if you want a firmer exterior
Brush with barbecue sauce if desired
Increase the oven to 400°F or broil briefly to caramelize the sauce
Rest the ribs for 10 minutes before cutting
Slice between the bones and serve
