Bring water to a full boil over medium-high heat
Once boiling, turn off the heat and cover the pan
Let eggs sit in the hot water for 9 to 12 minutes
Transfer eggs immediately to an ice bath for 5 to 10 minutes
Tap eggs gently on a hard surface to crack the shell all over
Peel under running water or in a bowl of water
Start peeling from the wider end where the air pocket is
Use eggs that are a few days old for easier peeling
