Scrape off food residue with a metal scraper
Wipe the surface with paper towels
Add a small amount of water to loosen stuck-on bits
Scrape again while the surface is warm
Wipe the surface dry with paper towels
Apply a thin layer of cooking oil
Spread the oil evenly with a paper towel
Remove and clean the grease trap
Empty and wipe the drip tray
Clean the exterior with a damp cloth
Dry all surfaces completely
Cover the griddle after it cools
