Preheat the oven to 400°F / 200°C

Pat the pork fillet tenderloin dry with paper towels

Trim off any silver skin or excess fat

Season all over with salt and black pepper

Add garlic powder, paprika, or herbs if desired

Heat an oven-safe skillet over medium-high heat

Add a little oil to the skillet

Sear the pork on all sides until browned

Transfer the skillet to the oven

Roast until the internal temperature reaches 145°F / 63°C

Remove from the oven and rest for 5 to 10 minutes

Slice against the grain and serve
