Heat a skillet over medium heat
Place one tortilla in the skillet
Sprinkle shredded cheese evenly over half or all of the tortilla
Add optional fillings such as cooked chicken, beans, vegetables, or peppers
Fold the tortilla in half if using half the tortilla
Cook for 1 to 2 minutes until the bottom is golden brown
Flip carefully with a spatula
Cook for 1 to 2 minutes until the other side is golden brown and the cheese is melted
Remove from the skillet
Let it cool briefly
Slice into wedges and serve
