Preheat oven to 450°F
Pat the prime rib roast dry
Season generously with salt, black pepper, and optional garlic or herbs
Place roast fat side up on a rack in a roasting pan
Roast at 450°F for 15 minutes
Reduce oven temperature to 325°F
Continue roasting until internal temperature reaches 120°F to 125°F for rare, 130°F to 135°F for medium-rare, or 140°F for medium
Check temperature with a meat thermometer inserted into the thickest part
Remove roast from oven when it is 5°F below your target temperature
Tent loosely with foil
Rest for 20 to 30 minutes
Slice against the grain
Serve immediately
