Rinse and sort the beans, removing any debris or damaged beans
Soak the beans overnight if desired, then drain and rinse
Add beans to the Instant Pot
Add water or broth, using about 3 cups liquid per 1 cup dried beans
Add optional salt, garlic, onion, bay leaf, or other seasonings
Close the lid and set the valve to sealing
Cook on High Pressure
Use 25 to 35 minutes for black beans, pinto beans, or kidney beans
Use 30 to 40 minutes for chickpeas
Use 20 to 25 minutes for lentils
Let the pressure release naturally for 10 to 20 minutes
Carefully release any remaining pressure
Open the lid and check the beans for tenderness
Drain excess liquid if needed
Season to taste and serve or use in recipes
