Rinse beet leaves thoroughly under cold water
Trim off tough stems if desired
Chop the leaves into bite-size pieces
Heat a skillet with olive oil or butter over medium heat
Add minced garlic or onion if desired
Add the beet leaves to the skillet
Cook, stirring occasionally, until wilted and tender
Season with salt and pepper
Add a splash of lemon juice or vinegar if desired
